Hi ramana42 , this is very interesting and I use coconut flour and as this article says it is very hydroscopic so absorbs a lot of moisture so you use much less. This makes for interesting results when baking and coconut flour is also great as a thickener for gravies and sauces and again you need much less. I find it works well with other flours so is well worth experimenting with.

Since you are using coconut powder,please clarify whether we can grind desiccated coconut into fine powder and use it instead of coconut powder that is commercially available.I am speaking both in terms of cost and nutrition.

I am taking raw coconut twice or thrice in a week as break fast.
Raw coconut is very much part of south Indian cuisine,and we all like it in various forms.Flour is one of those.I have not used it yet,so I cannot elaborate right now.I think it will be a good idea to compare nutritional values of raw coconut and coconut flour.I shall come back,once I do that.
As per my search on Google.major difference between the two is that flour has about 34% fiber as against 10 % in raw coconut.It has much more protein and similar fat.Carbs are very high in flour,probably due to high fiber content.I feel one can consume about 20 to 30 gr in one serving.It must be suitable for seasoning,thickening or enhancing fiber content in dairy or meat based dishes.

It is good advise.I am planning to have two egg omelette for breakfast and use coconut flour to enhance the fiber content.It is going to be like an experiment.
If you can you need to make your own fresh coconut milk!, in UK one coconut is 50 pence. Each half, scraped with hand scraper attached to the table with added water can make good quality coconut milk.

You can eat appam for breakfast with coconut milk but no sugar, good for you.

Interestingly, I tried Aappam(not to be confused with appam (paniyaram as called in Tamil Nadu or GuLiappa as called in coastal karnataka) for breakfast one day last week. I had 3 aappam medium sized ones with 1 cup of Sambar.
BS reading looked okay. PPBS was 147 mg/dL.

You can try palm sugar instead of white sugar. I'm not sure you get this one in UK. I have 3 tea spoons of palm sugar for 250 ml of milk(full fat) daily. I use a specific palm sugar from Palm Sugar and Palm Products Research and Promotion Foundation(Visit this website pprpf.org for more information).
