South India's most wonderful gift to the vegetarian community is curd rice and idlis with sambar and chutney (with minimum possible sugar, preferably none). Ideal, well balanced food for diabetics and people who want to reduce weight. Of course, this diet has to be supplemented with some protein and fiber rich diet, preferably lots of fresh raw vegetables and fruits in the form of salad or raita or whatever you prefer.
Hi Anup:
Everything you eat gets converted to sugar in the body, because that is the only form in which the body can absorb nutrients and proceed to metabolize them. Further, the highly polished rice that we get these days has had almost all of the starch removed from it in the polishing process. Under the circumstances, it is highly debatable if the consumption of rice in reasonable amounts is really going to make a difference to your blood sugar levels. The main items to be avoided would include processed or refined sugar in any form, be it cakes, pastries, mithais (that we Indians love), fruit juices (most of which contain a lot of sugar), aerated drinks, etc.
An ideal diet would be a well balanced mix of cereals, pulses, vegetables and fruits with a lot of stress on fresh vegetables and fruits eaten raw, and avoiding all refined food products. A little research on the glycemic index of various fruits and vegetables will give you a fair idea of the fruits to avoid.
Finally, the more you exercise, the faster your body metabolizes the food you eat and the faster your sugar levels normalize.
Of course, this is my personal opinion based on my experience. Difference of opinions will always be there and are always welcome. After all that is an integral part of this learning process.
inspirational and very clear explanation...your knowledge either by experience or readings on this subject is matchless...you are a precious asset to this group:)
