I follow naturopathy principles. I attended a diabetic camp arranged by Manthena Satynarnarsyana Raju, a famous naturopathy doctor in Vijayawada, India.
The diet I follow I'd as given below.
8.30 am Vegetable juice
9.30 am Sprouts 45 sms (wt. Before sprouting) with papaya fruit or guava.
1 pm chapathi with a dish of vegetable curry. This consists of at least half kg. of vegetables boiled without oil, salt
I was replying with a phone. But unfortunately some button is pressed without knowledge and got stopped. I will continue now.
Half Kg. of vegetable curry made without oil, salt, sugar, spices. with 4 chapathies, made from 60 Gms of wheat flour and greens. Greens are most important because salt is not added to my diet.
(Salt is most important for the body without which we may not live. I do not use salt because vegetable juice and half kg. of vegetables and greens provide me enough sodium for the body.)
6.30 pm dinner with chapathi/rice flakes soaked in water with vegetable curry as for lunch or with vegetable salad.
There is no restriction for quantity for breakfast, lunch or dinner. Within a month improvements can be seen by lab test.
Continue same diet and I will never have glucose up or down.
I have given diet I am following.

In your earlier reply, dinner was missing, but you have included now. Thanks and now waiting the name of vegetables and beans.
Vegetable juice:tomato, beetroot, cucumber, bottle gourd, carrot, white pumpkin.
You may add a small qty. of ridge gourd, snake gpourd.
If you are adding beetroot, see that only one or two slises are used. Otherwise, the juice may be irritating.
Add a spoon or two lime juice.
You may add one spoon of honey for making taste.
qty. about 350 ml
Time: before breakfast
Time gap between juice and breakfast: about 1 hour.
Regarding sprouts, I will explain why sprouts are good, what are the advantages, how to prepare them, etc in my reply tomorrow.

In poha there are several varieties- thin, thick, white, brown.Iuse brown vzariety. Occasionally I use white.

Can you please share your own report before and after and duration of diet.
As per your writing it is not so firm answer. although you have mentioned it is vegetarian diet need more specific manner means with time approx qty name of ingredient in fixed do not add you may word this word will not stable your formula.
So request you please take time and draft a complete fixed plan.
Sending a message via phone is a bit difficult. Somewhere one finger touches the phone and partial message is posted.
My dinner may consist of three chapathis or about 70 gms of flattened rise(poha).
I have veg. Curry or salad also.
