Is Zinc deficiency the trigger to diabetes?

Did you read about the diabetes cause? They say the deactivation of pancreas is due to the clumping of amylin which could be due to zinc deficiency.

The phylates in grains and legumes can cause mineral deficiency by preventing absorption.

Meat, fish etc are good sources of zinc.

Soaking grains and legumes, fermenting dough etc can minimise phylates.

May be we are closer to a cure.

Isn't it meaningless to look at the nutritional value of grains? How do we know we would absorb these when there are so many anti nutrients present?

We have to learn about proper cooking and pairing with complementing foods.

Perhaps the traditional Pazanknji of Kerala with cooked and cooled and fermented parboiled rice is a superfood with phylates removed and starches degraded. Wish there was a nutritionist on board. Perhaps they are able to avoid diabetes.
