Oats & Raisins Yogurt Muffins Recipe

208 calories & 8.9g Fat per muffin

Vegetable Oil 90.0ml

Be-Ro Plain Flour 170.0g

100% Rolled Porridge Oats 85.0g

Alpro Soya Light Yogurt (home made) 240.0ml (but plain light yogurt can be used)

Semi-skimmed milk, average 60.0ml

Eggs, whole, raw Medium (57g)

Light Brown Soft Sugar 110.0g

Raisins 110.0g

Additional ingredients

1.5 teaspoons baking powder (7.5ml)

½ teaspoon salt (2.5ml)

½ teaspoon Bicarbonate of soda (2.5ml)

1. Prepare muffin tin by lining with muffin cases, Preheat oven to 375 – 400F (190-200C)

2 In a medium bowl sift together or mix well with a fork flour, baking powder & salt, set aside.

3 The following should be done just before baking. In a large bowl, combine oats, yogurt & bicarbonate of soda. Add milk, egg sugar and oil. Beat together well with a spoon.

4 Add dry ingredients to wet mixture. Stir just until combined, adding the raisins during the final stokes. Batter will be thick and lumpy but no dry flour should be visible.

5 Spoon immediately into muffin tin lined with cases, filling at least ¾ full. Makes 10-12. Bake for 20-25 minutes, until tops are lightly browned and spring back when touched.

These muffins freeze very well, that is if I manage to fight my hubby off and get some of them as far as the freezer. Make a nice change for breakfast after a run.
