I'm really struggling with week 7, I just can't quite get the 25 mins. I was sick for a week and couldn't move but then when I was getting back into it I just felt I'd declined so much in my week off. Feeling quite disheartened by it.

Keep going, you've come so far. Try going back a week or two until you feel more comfortable and confident. I'm the same age and am also on week 7, it isn't easy but you can do it 👍

You don't lose any significant condition in the first two weeks of non running, but it does take longer to recover from an illness to comfortably undertake hard physical exercise than it does to get back to day to day activities.
Recover fully and you will be fine, just pick up where you left off.

Give yourself time to recover fully and then get back into it slowly. There's no hurry. I'm off for around 10 days after having gone every other day since I started. Am not looking forward to getting back into week 8 when I get home but I'm going to try and see where I get to. It may mean repeating a few runs before I'm ready but there's no rush. Give yourself time.x
