I can officially say that I can run for 5K!! Got to week 7 of 3x 25 minutes and on the third run I just decided to keep going! Managed it in 33 mins. Next target to complete it in under 30!

Congratulations.
I would stick to the plan and graduate by completing the remaining workouts and on graduation I will send you a guide to post C25K running, which will tell you that the sign of a rookie runner is that he runs every run flat out
Your impetuosity possibly puts you in the bracket of those who may do too much too soon, only to regret it when injury strikes. Training plans are progressive because that is how our bodies adapt.
