The ideal is 3 times and the programme recommends that. But far better to run twice than not at all. Could you fit in 2x30 and 1x something less? It’s mostly about the habit forming I reckon.
I have been keeping to the C25K program 100%, on Saturday and Monday I will be running W9 runs 2 and 3 respectively. After I graduate I plan to do two x30 minute runs twice a week for a couple of weeks then increase that to 40 minutes maximum with a shorter run in between, I think the idea from you is about correct, in line to what I was also thinking.
Hi Keels, I'm continuing to run 3 times per week as we did in the programme, but you need to do what's right for you. For what it's worth, I think it's important that it fits in with your lifestyle and other commitments, and the running should be a joy, not a chore!

Run when you can.... life gets in the way
Fit in short runs and longer ones at a weekend, if you are able... you have graduated and you will find even your shorter runs useful
Make sure you keep up some strength and stamina exercises too, to keep you going
Running is all about enjoyment... must get a routine going and stick to it
I don't think that if I'm running with my sister I will be running 3 times a week every week. She is much busier than me! Our aim is every third day, we can't fit in every other day. So some weeks it will be 2 some weeks will be 3. That's so much more than we were doing 10 weeks ago ! I'm also doing more strength stuff and will be walking a lot more too, so active every day. I don't want running to be a 'have to ' but I do want it to be a 'want to..' Want it to still be Fun!! 😀😀😀
Doing 150 minutes of heart rate raising exercise per week is the current recommendation.
