Rest Days
Walk, cycle, swim, weight lift, yoga, sculpting, make cakes! Anything you fancy that isn't running ๐
Anything low impact which can include walking, cycling, swimming, squats(!). You just need to make sure you are 'resting' the muscles you have used while running.
I'd go for any upperbody exercises, like swimming, bodyweight strength, maybe walking. If you're doin only 1 rest day between runs, I would suggest to avoid any leg exercises in the beginning of the running journey. Definitely good decision is any kind of stretching session, of it is classi stretching, yoga or anything similar. You can and should do some post-run stretches just after run as well, but those can be only 10-15min. While the rest-day stretch can be long 30-45min stretch session that cover more muscle groups (incl. abs, chest, back, shoulder, biceps, that also work during running).
But to be honest, do whatever you feel like and what you fancy. Any movement is better than sitting on the couch
