So I have been slowly increasing the distance on my long runs and finally did my 10K. The final timing was 1hr 16 mins. I walked 100 meters every km...
Does that still count??

It counts for me! - I have used your strategy to train for a HM . I use my GPS running watch to run for 900 metres of every klm and walk the remaining 100 metres. I am even using that strategy (kind of) to get me back to running parkrun after a 6 months absence - by running 400 metres and walking the remaining 100.
I will probably also use this strategy to run a 10K that I have entered into in early April. Right now, 10K seems a long way away for me - but considering that only a few months ago, I couldn't even walk 1K of parkrun , I guess I am heading in the right direction.
Yup, I'd say it counts. You covered 10k, and in a very respectable time, too. Great job! You should be proud.
Definitely counts - I did mine with a short walking break.
