I’ve noticed in the last 6 months that my heart rate randomly decides to increase. Example: I sat in a hot bath tonight probably for an hour or so. Before I get out my heart rate is at 118. It happens when I’m laying down, sitting on the couch, i.e. relaxing. I don’t get it. I’m 5’ 7” and 180 lbs - not significantly obese. Is there anxiety in my sub-conscience? What is it??

I have anxiety that caused my heart rate to increase along with my blood pressure. If your Bp is spiking then you need to see your doctor. My doctor put me on Bp meds to counter it - beta blockers work best as they block the adrenaline to your heart.
When your body gets superheated: Your blood vessels dilate to try to help cool off the body. Blood diverts to the skin, away from the body core. Heart rate and pulse increase to counteract a drop in blood pressure. That's the biological explanation. I have dealt with the same issue with my anxiety. It's much better now after months of random increase of my heart rate, especially when I would lye down for bed or on the couch. After having multiple panic attacks over a year ago while in bed it caused a learned reaction to freak out or anticipate an attack when I would go to bed. I was also way oversensitive to my heart rate and constantly checking it with a phone app or manually. Doctors and cardiologists confirmed my heart is fine but it took me months to let go and believe it. Get a check up and that should relieve any concerns. It's probably your subconscious mind tricking you.
