if the digestive process takes 6-8 hours , then why do people get food poisoning a few days later ? wouldn't the contaminated food already be digested out ?

Many foodborne diseases don't start to produce the toxins that make you sick until after they're in your intestines. Then it can take days before enough of the toxin is built up to cause the symptoms.

The bacteria in the food have jumped off and into the digestive system where they are busy multiplying until they're so many they make you sick. Could also be a viral infection or bacteria picked up from dirty hands etc.
