Love a decent soup . Weather here has improved so more a mixed salad this week but it will turn cooler rapidly . I love crusty bread and butter with mine but will have to just have the soup for a while . You seem to know what you are doing and your bowl full looks yummy .

Of course guys I can give you the recipe200 g of onions

500ml vegetable stock

Plain four

Chopped parsley

1 carrot roughly grated

1 clove of garlic

2 tbsp of lemon juice but you can use one depending on how tasty.

The original recipe asks for double cream I only used two tablespoons of

Method

Put the onion chopped onions and garlic and fry to soften but not to brown

Add the plain flour I might have to go back and check how much.

At the stock

Then add half a pint milk

Stir and make sure there is no lump.

Simmer for 25 minutes

Then add a carrot and then add the cream simmer for another 10 minutes.

Add the coriander in

You can either serve the way it is or blend with a hand blender.

Service as an appetiser or a starter before

Have you tried with crème fraiche? I can’t have cream because of the amount of fat in it . Not a fuss pot but have no gall bladder . Soup is a great lunch and I make double and either freeze or have next day .
