My other half is going to be away and I have a a couple of busy weeks -he normally cooks our evening meal. I have some things in the freezer and a few favourites I cook ’for one’ but would love some of your favourite quickish meal ideas. I eat salad for lunch every day and aim to be low carb but I eat most things, veg etc. Looking forward to some fresh ideas -thanks in advance x

Eggs -so omelette with loads of veg . Carbs as in veg - broccoli will still be good for nutrition as will anything green -kale and rainbow veg - peppers , tomatoes. Beetroot excellent with sliced chicken breast cooked in no time . Fish really easy to cook in foil in oven - no washing up. Tinned fish like tuna and sardines / mackerel good with salad . Tinned lentils , beans are really good to pad out a meal .Chick peas bulk out a salad . Flavour with sprinkling of herbs, smoked paprika and drizzle a salad with any flavours vinegar , add pickles inc beetroot . Avocado smashed with a boiled egg is an alternative easy dish for 1 .Berries are for me the best fruit as many others I limit because of the sugar content but bananas are very practical when exercising . Love their source of potassium
