Quick meals

Ok I am getting fed up with trying to think of something quick to eat and low calorie, by the time I get home from work having been out from 8.15 to nearly 6 pm I am too tired to think of something to eat. I am a vegetarian. I need something quick and filling. Only 197 calories left from 1400:-( I love potatoes, rice, pasta ! Most Quorn things

Hi Pallyali,

I am a Vegetarian too: a good site, I think, is BBC Good Food -

bbcgoodfood.com

Click on 'Recipes', then 'Vegetarian', and it gives you lots, 'Healthy Vegetarian'. 'Quick', 'Curry', Pasta', 'Soup', sections, the ones I have tried have taken about 30 minutes and main meals generally about 350 calories, gives all the nutritional values as well. Hope this helps! Good Luck !

I'm similar to you. I'm out 7am to 6.30pm most days.

I usually try batch cooking on a weekend and fill freezer. Ratatouille, Quorn bolognase/chilli, aubergine spinach and ricotta bake. So I can easily grab and heat up when home

I seem to eat less during day so usually have calories over which means I can have a snack e.g. Piece of toast when I get in before cooking. Probably shouldn't snack but can't help it!

When I did WW previously I used to be an utter geek and write points value on boxes. Guess you could do similar with calories if you really wanted too!

Thanks made better calorie choices through the day today, blueberries rather than grapes, a lot lower in calories, will try and make some veggie bolognaise and Quorn curry's to freeze not much room in freezer though have to share it with lodger :-( Aubergine spinach & ricotta bake sounds yummy ? :-) thanks for the encouragement

Yes grapes are quite high! Found that out after eating a whole punnet once! Ha! That aubergine recipe is a bbc good food one. It's got so Italian name primavera?? I'm not sure calories but equivalent to 9pp of weigh watchers
