There are a variety of eating plans followed which will help you decide on a way forward that works for you. With regard to chia seeds i make a chocolate chia seed pudding practically everyday and yes they are gelatinous but i find when you eat it its quite mousse like. I'll take a pic to show you how mine look and add it to this post in a few minutes 😊

Hi, they are gelatinous especially if left to soak. I eat them mixed with Greek style yogurt for breakfast and have found that I prefer them when I've not left them to soak.
😂 yes they are like frog spawn when soaked. You could try grinding them in a coffee grinder and use the result to thicken yogurt etc.. but it will give a gelatinous texture so not quite a substitute for cornflower or arrowroot. I am like need todo and sprinkle them on stuff or have a few as a snack by dipping a moist finger into a small portion mixed with other seeds.
😆 Yes-yes, they're meant to be frog spawny. If mucilage isn't your thing, chia might not be for you. (Ribbit!)

Depends how you want to eat them. I sprinkle them on salad are they are crunchy then. If you want to put them into a pudding then they do get jellylike
You can buy ground chia seeds if you’re not able to grind them yourself. These do thicken puddings but without the frog spawn effect.
Um, never thought to soak or do anything else with them. I have a small amount in Greek Yogurt with fresh fruits, seeds and a little Granola.
