Does hypothyroidism slow down the process of losing weight? Do taking blood thinners affect weight loss?
I think you can lose weight and eat eat SOME carbs at night (I'm not convinced that the time of day makes a difference). What might be problematic is an excess of carbs, whether that be morning, daytime or evening, and the last snack of the day might just as easily be avoided if you don't need it, but it depends of what you ate earlier in the day.
There's no problem I can think of when combining SOME carbs with animal protein. Again, the question is how much.
As we're discussing carbs, my understanding is that people who eat a 'low carb' diet, will vary the amount of carbs. Some going very low (below 30g/day), others at a 100g/day or even a little more, some go in the middle.
Do you have a plan in mind? It's a little hard to tell from your questions. 😊
The plan that I have more or less followed on and off has always been weight watchers. Basically just eating everything but sensibly.
If you're aiming for permanent weight loss, it sounds like you need a different approach. Weight watchers hasn't done that for you or you wouldn't have needed to go back several times.

4) I eat whole foods, so combine all three macronutrient at each meal. I limit the amount of carbs I eat, so it's never a lot of carbs.

I take an anticoagulant and I've been losing weight. I do eat carbs in the evenings but they're low carb veggies. Hope that helps.
Hypothyroidism should not slow down weight loss if you are on the right medication. I have had an under active thyroid for nearly 40 years, and taken thyroxin all that time. I finally lost weight when I committed to calorie counting and healthy eating just over three years ago, and have pretty much maintained ever since.
Speaking purely from personal experience, if your underactive thyroid is autoimmune, you might have some additional difficulties losing weight, depending on if it flares up. I've not found it directly causes weight gain, but more long plateaus in weight loss. Also, if I'm experiencing joint pain and digestive issues, I'm less likely to want to go for a walk or workout, which I think really doesn't help.
Some of the weight gain around an underactive thyroid is water and salts, hence a sometimes puffy appearance, especially in the face and ankles.
My thyroid is very well medicated, but unfortunately the autoimmune side isn't, so I will see thinning hair, dry skin and slow weight loss, when my body is attacking my thyroid, even if my levels of FT3 and FT4 are absolutely optimal.
I am experimenting with a gluten free diet at the moment to see if it helps reduce the autoimmune issues, so by default, I've gone more low carb. You do need to be quite careful with an underactive thyroid, as insulin resistance is much more common than in the general population, which can eventually lead to Type 2 diabetes. Sorry, don't mean to scaremonger!
