Summer vegetable quiche with an almond flour base:
Mix two cups ground almonds with two eggs and pinch sea salt. Roll out between sheet of greaseproof paper. Bake blind in a buttered dish for ten mins. Steam bunch of asparagus and two sliced leeks for 3 mins. Drain and lay on the quiche base with some halved cherry tomatoes. Whisk two eggs with half a cup of grated cheese. Pour over veg in quiche base and bake in moderate oven for half an hour.
