Something reminded me of thousand Island dressing today. If you don't recognise it, the most famous usage is the special sauce in two all beef patties,special sauce, lettuce, cheese, pickles, onion on a sesame seed bun**
The big pictures are the naked salad and the salad dressed. The small ones show the amount I have to eat in the next week, and it all mixed together on it's way to my tummy.
This is my keto version of 1000 Island dressing. It's meant to made with various sweet things (eg sugar, ketchup, sweet pickles etc) but I just left them out. I thought it was too tart when I made it, but a few hours in the fridge, and it's delightful.
I'm going to enjoy finding ways to use it up this week! 😋

Mix it all together. Refrigerate for a few hours for flavours to blend, then taste and adjust the seasoning if necessary.
Notes
* It's an American dressing, so traditionally sweet. If you want that, add some artificial sweetener, or if you aren't low carb, you might want use ketchup instead of tomato paste, sweet pickles or add some sugar.
*The traditional recipe had a boiled egg pushed through a sieve as a thickener, but mine was fine without it, and I don't think it would have been nicer if it was eggy.
* I made it in the food processer, so minced the chopped ingredients first, removed them to a jar. Made the mayonnaise, added the chilli powder and paste and blended. Add back in the chopped ingredients, and pulse to mix but not to further chop them. Then put the whole lot in back in the jar.
I am not a huge fan of jarred dressings. I don't think I have ever bought mayonnaise. I didn't before because I was low fat, and now I have read the ingredients 🤢
Store bought thousand Island will be quite sweet, so different from this.
Prawn and mayonnaise is a great combination. I started making it to have with prawns.
SB, that looks very yummy! And great photo's! With sauce like that, it's better on a beautiful coloured salad like yours (rather than on a greasy burger) 😋
