My first attempt at a Buddha Bowl with a home-made tahini dressing. I've been craving one of these for a long while and finally had a go. The first time I've made something healthy in a long while 🙈

It's high in fat but packed full of goodness.

My tummy is happy with me

Pretty good. Completely sabotaged all my hard work, (which is nothing new for me) so trying to get back on track.

It's tahini dressing mixed into curly kale. Grated carrot, baby toms, nocerella olives, avacado, fresh coriander and a few of my favourite herbs mixed into some cous cous.

You could use anything - roasted veg, chick peas, any of your favourite vegetables, any type of bean, falafel or salmon.

I used this recipe but adapted it to taste (a bit of vinegar etc) I'm sure they'll be nicer out there. It's the first one I found cookieandkate.com/creamy-ta...

That looks lovely, and so fresh after all the brown/beige things I have eaten over Christmas :) I have fancied trying Buddha bowls for ages, I pinned loads of ideas but haven't quite got round to actually assembling one :) I must resolve to do one this week :)
