My first attempt at a Buddha Bowl with a home-made tahini dressing. I've been craving one of these for a long while and finally had a go. The first time I've made something healthy in a long while π
It's high in fat but packed full of goodness.

It's tahini dressing mixed into curly kale. Grated carrot, baby toms, nocerella olives, avacado, fresh coriander and a few of my favourite herbs mixed into some cous cous.
You could use anything - roasted veg, chick peas, any of your favourite vegetables, any type of bean, falafel or salmon.
I used this recipe but adapted it to taste (a bit of vinegar etc) I'm sure they'll be nicer out there. It's the first one I found cookieandkate.com/creamy-ta...
That looks lovely, and so fresh after all the brown/beige things I have eaten over Christmas I have fancied trying Buddha bowls for ages, I pinned loads of ideas but haven't quite got round to actually assembling one I must resolve to do one this week
