Carrot and Pumpkin Soup with a hint of ginger (Really easy to make and all wholesome nutrients, especially as most of the ingredients are organic and home-grown)
Boil in a little water:
Carrots
1 large red pepper
1 large green pepper
1 tablespoon of Spirulina powder
1 tablespoon of Curcuma (Turmeric powder)
100g of Chickpeas
1 Tablespoon of fresh parsley finely chopped
1 tablespoon of fresh rosemary
Fresh Ginger (amount a per your desire - I really like the Ginger so put quite a bit inside :-P)
Fry in 1 tablespoon of Raw, Organic cold pressed coconut oil:
400g of fresh pumpkin
1 teaspoon of fresh rosemary
1 small red onion
Once all ingredients are cooked, transfer pumpkin and red onion into the boiling water with veg, and mix with a Bamix or similar to puree the mixture.
Season with salt and pepper if required, and season with a little lemon zest to serve.
Beautiful on it's own or served with a small piece of fresh wholemeal bread
