Todays activities... keeping busy and cooking!

Woke up to sunshine, which was not what the forecast had promised! Enjoyed a bit of a lie in drinking 3 cups of tea made for me by my lovely husband!

After my shower, I decided to make the most of it and ventured out into the garden to water all the pots, hanging baskets, vegetables. Deadheaded some of the flower and the roses. Weeded around our coriander which was being threatened with being overtaken with chickweed. An easy weed to pull up, but left to itself, it will quickly take over and then my coriander will be no more!

Once these little jobs were complete, it started to rain and there were a couple of thunderclaps - so I came back inside - time for brunch!

Three Cumberland chipolatas and half a tin of plum tomatoes with a slice of granary bread and butter (445 calories) and a cup of freshly ground coffee.....

I then prepared a chicken casserole using chicken thighs and Chantenay carrots, onion and a packet of Colemans Chicken Casserole mix. That went into the slow cooker and we'll enjoy tomorrow with some homegrown new potatoes and green beans. There are four skin on thighs - if we have one each, the recipe works out at 246 calories.... but we may well eat 2 if they're not that meaty!

I then set to work on an Aubergine Parmigiana - loosely based on this recipe: theguardian.com/lifeandstyl...

Just worked out the calories - 363 calories a portion (made enough for three portions). That's going to be our dinner for tonight with a green salad.

Hello Pineapple27, It sounds as I you have had a very productive day!

I tried a variation on your butternut squash, mint and feta cheese recipe on Friday. I came across it in the recipe section, when looking for some inspiration. It was lovely, so thank you!

Ohhh, glad you enjoyed it. Mint adds something else. doesn't it? :D

What a busy bee you have been :) Hope you enjoy the Aubergine Parmigiana, looks nice and already having tomorrows meal made too

That looks and sounds delicious! Thanks for the recipe. It looks like it will freeze well and I am always on the lookout for veggie things that freeze!

You have been very busy today. I like the sound of your cooking. I wish I could or like cooking. I have a very fussy eater in my grandson will not eat onion or mushroom. So I gave up on cooking. I will have to try and done some for myself .

Awww, I am sure you could find something that he likes and that is healthy? I am lucky that I LOVE cooking, so it never feels like a chore to me!
