i have something-

try this red lentil curry. all you need is half cup of red lentils, 3 gloves of garlic, chillies to taste, half an onion, half a teaspoon of tumeric, salt to taste and corriander (optional)

add the lentils and tumeric to boiling water (one cup). grate the garlic into the boiling lentils.

in another pan add a touch of olive oil, finely chopped onions and chilli cook until golden brown.

once the lentils have cooked down, add the onions and chilies into the lentils. leave to simmer for 5 mins.

top with corriandor and eat with boiled rice or carb of your choice. :)

This is a recipe of my own creation. Sorry I have no quantities, just go easy with the tomato passata!

Vegetarian lasagne

Quorn meatballs

Quorn mince

Red onion

Peppers

Sundried tomatos

Spinach

Worcester sauce

Spicy Italian seasoning

Tomato purée

A little tomato passata

Sorry I don't have quantities I just chuck stuff in!

Layer up with pasta sheets and white sauce. If you want healthier white sauce you can use quark watered down with semi skimmed milk. Half way through baking add healthy cheese or low fat mozzarella slices on top

Search online for Jamie Oliver Superfood recipes-his take on superfoods is that they are healthy not some magic thing that is busting with nutrients.

I just substitute quorn or soya pieces/chinks and mince for meat- so I make spaghetti bolognaise , cottage pie and meat curries using meat substitute. My favourite is spag bol- I make this in advance and divide it into 4 portions freezing the remaining 3 portions and then its ready for future meals.

300-350g quorn or soya mince

2 peppers- any colour- diced

1 medium onion-chopped

2 garlic

1-2 large cans of chopped tomatoes (depends how wet you like your bolognaise sauce or can have 100mls stock & 1 400ml can of chopped tomato)

1tbspn olive oil

1 tbspn tomato puree

Heat oil and fry onions for 10mins gently add mince, garlic and pepper and fry for 5 mins, Add tomatoes =puree and tinned (and stock if using) and simmer for 20mins

Cook 4oz of spaghetti
