Have you tried smoothies? I have kale in mine with fruit and then you can't taste the kale
Vegetable based soups. Google recipes and find some to suit you. I make a delicious lentil and tomato soup from the 5:2 diet webpage. Other favourites are broccoli and cheese soup, curried parsnip soup and roasted butternut squash soup. easy to make up a quantity and freeze for when you don't feel like cooking!
Have a look at some veggie recipe books for ideas. What about starting with some 'sweeter' tasting veggies - sweetcorn, parsnips, carrots, etc. I love roasted veg and quite often roast red onions, tomatoes, mushrooms and courgette. Lovely with meat and fish or mixed with pasta and rice. You could always add some pesto or similar to pep it up a bit? I am actually the opposite- not a massive fruit fan but love veg! How about carrot sticks and houmous? Don't force yourself to eat something you don't like but maybe experiment until you find a couple of things you do.
