I know everyone is too busy these days to cook and make food during the week when they are working so I thought Id share my snack soup. Every Saturday I make a slow cooker soup. I go to my fridge and look at what left over veg are there. Lettuce, broccoli, cauliflour, cabbage, carrots, spinach, celery etc any of them that are starting to look a little sad because I havent eatten them yet goes into my left over soup. I cut them up finely or leave some chunky. Im a calorie counter so I weigh everything. But because veggies are low in calories you will be fine making it and eatting it if you dont count calories. Once all my veggies are in the pot I put 100g (dry) of Soup/broth mix (this is usually split pea,red green yellow) and barley combination) This is my protein fix to make you feel full. Next comes a tin of tomatoes (no added sugar). I like tomatoes so in they go. If you dont like them leave them out. Next is the flavour. This week is chilli soup week. I like hot chilli powder to give my soup a kick. Other weeks Ill use italian seasoning, basil, parsley, any spice really that you like. Flavour to taste. Most are low cal. Now personally I dont add salt at this stage. 1 too much salt is bad for you 2 I am used to not adding salt. If you need it added it (lower the quanity each week and you can wean yourself off salt). Top up the pot with water (yes I said water not stock) Vegtable stock is veggies with water, hence my pot is water. This weeks soup will be 120 calories per portion. I turn the pot on and leave it to cook until the veggies and soup mix (especially the soup mix)and stock taste good. (any where between 2-4hrs in my crock pot). I then leave the soup to go cold.
I put it a container in the fridge and if there is too much some in the freezer). I use this soup as my go to snack food for the rest of the week. I get a good 6 portions easily in my pot. I can use it to replace a meal if I want too (especially if its taste really good this week) You can add meat to it when you eat it if you want, I like mussels in it sometimes. A bit of cheese, cream, yoghurt (one not all lol) will change the flavour a little if you need to have a break in the week just go easy with the portion. The beauty of making left over soup is, its cheap, you were going to throw those veg out, it tastes different every week, the flavour intensifys over the week (you can always add a bit more water) and its low cal. I ping my soup in the microwave when I want some.
