Hi,

My daughter and her partner are visiting this weekend. I have to pick them up from the station after work so won’t get home until late - any ideas on something quick and simple that I can cook for us all? Can’t pre prepare a pasta bake (which is what I would normally do) as my husband won’t eat whole meal pasta and I don’t think I’m ready to resist the temptation of garlic bread yet

Do you have a slow cooker? How about a lovely comforting stew?

It can be left to cook all day and will be full of flavour :)

My ‘go to’ quick and easy is a stir fry - put the chicken into marinate in the morning, chop veg in advance if you can. 5 minutes to cook when you get in 😊

Chicken with fennel and couscous

Prepare the day before: 1. Cook chicken thighs. Keep the liquid aside. 2. Cook fennel bulbs with quince (if not available, then apple), orange and spices of your choice (rosemary, lavender, nutmeg, basil, star anise, other aromatic spices). Ideally, does not need extra sugar. (Alternative to fennel: pineapple.)

On the day (very quick): 1 Flash the chicken in oven / in a pan until golden brown. 2. Reheat the fennel side dish. 3. Cook couscous in the chicken soup you kept aside. (The pasta is optional. The fruits already contain sugar, so you may want to skip the couscous, or use wholegrain version.)

How about omelette? Pre-prepare some roast veg / sliced tomatoes ready to throw it all together when you get home. Just add green salad and a selection of chutneys/salad dressing :)

Burger and chips!!

Who doesn't like a takeaway on a weekend - especially if you have visitors as well ....

Twist is - make your own healthier burgers!!

you can shape / make the burger pate in advance and leave in the fridge, sweet potato wedges rather than fries - these can be put on a tray, in the oven and are little prep work / faffing. A nice big salad can be prepared in advance as well then the burger cooking takes minimum time when you come to make.

Morning , Have you thought about making a lasagna or cottage pie you can still count your calories and you can make it the day before ,or chicken salad ,

Or some nice hot soup with some lovely crusty bread
