I am wanting to try natural desiccated thyroid but unsure which brand is the best and why? My GP is willing to monitor me on this x

There is no "best". The best is the one that works for you, is available, and you can afford.

I think every make of proper desiccated thyroid has been claimed to be the best by at least some people.

You don't say what country you are in - and that can be important. Suggest you add it to your profile.

Availability does vary with Nature-Throid being in short supply and WP Thyroid being unavailable.

Well - at least importation for personal use is legal in the UK!

Are you having to pay for it?

If so, the Thai makes (Thyroid S, Thiroyd and "T.R. Thyroid Supplement By T.MAN") seem to be acceptable to many and are considerably less expensive than Armour, NP Thyroid (Acella), Erfa Thyroid, Nature-Throid and WP Thyroid.

Your GP, though, could be less happy about the Thai products which are not licensed in the USA, UK or Europe.

No desiccated thyroid product is licensed in the UK.

Armour Thyroid and NP Thyroid are listed by the FDA in the USA:

Erfa Thyroid is in some way approved or licensed in Canada.
