Sweet Potato Chickpea Coconut Curry

Hi all

Hope you're having a good day so far. I've been in the kitchen and made a curry (see above) and a soup I've never made before (photo will be in a separate post as it's still cooking). I always batch cook and then freeze as I'm the only Vegan in our house and there are very few recipes that serve one plus it work out to be time saving when batch cooking.

I've made this a few times now and I have to say it's the best Chickpea Curry I've made. I've been following a Low Fodmap diet for over a year now (I have successfully reintroduced some high fodmap foods) so to replace the garlic and onions I use Hing and I make my own Low Fodmap curry powder. I forgot to add in the spinach today but I have some I froze a while back so will just add some frozen spinach before reheating the curry.

always nice to meet another vegan!!

i know your difficulties! every meal in my house is 2 completely different meals!!!! and someone in my house (shall rename nameless) is so fracking stubborn - they have NEVER even tasted hardly anything i've made!!! frustrating to say the least!

your curry looks REALLY yummy!!!

i was also unfamiliar with "fodmaps" - so i appreciate your mentioning that. however - given that it sounds like the alliums sound like things to avoid if you're on this diet... i'll never go there! - gotta have my alliums!!!! especially garlic!! i can eat that by the BULB!!

i suspect the fodmaps thing is UK based... our labeling laws and rules seriously suck here, due to corporate interference... and a mostly unaware and/or uncaring population.

i'm sure you know we don't believe in fixing the root cause of problems here - we just expect someone to come up with a pill to fix us after we abuse our bodies!!!! :o) ;-)

I agree, great to meet another Vegan.

Oh same here, it's the same food day in day out, looks at my food and says yuck having no idea what it tastes like.

I can vouch it's an excellent recipe.

I also love garlic and I'm going to give it a go sometime to see if I react at all. My diet isn't as restricted now as it was. I use Hing and it supplements garlic and onion so that'll do for now.

Believe it or not the Low Fodmap Diet originated in Australia, Monash University, it's worked so well for me.

The root cause is the best way and pills if it doesn't work.
