We did the housework this morning then I made a low fodmap Ratatouille, pies for hubby (we are totally opposite in what we eat) and I made falafel, a recipe that Agoodenough posted yesterday. I made the falafel low fodmap, didn't have any mint so used spinach instead and added lemon juice. I had 2 for tonight's dinner.

That's disappointing isn't it when you have psyched yourself up to go for a scan only to be told at the last minute its been postponed to some unknown date in the future!
Yes itβs frustrating, the scan lasts 6 hours, itβs a hydration scan he has to have now that they have taken out one of his kidneys due to cancer I hope you are keeping well x
Yes I'm fine thanks and I didn't exactly like lockdown and the removal of freedom of choice with things but I decided to concentrate on things that are in my control and it had turned out for me to be a productive time even though it wasn't something I would have chosen to do myself.

When I was at my previous job I had an invite to go out for lunch from one of my friends to go to a vegan cafe across the road from the offices called the moos and I had accepted thinking why not and how it would be nice to do something a bit different so off I had gone!
It was alternative was the moos and they had falafel in there and I had given falafel a try and I had enjoyed it and edamame beans as well were something different as well!
I would rather keep an open mind and try new things and regret doing and trying things than regret not doing them!

Good on you, it's good to ret different things. Before I became Vegan,I was a pescatarian before, I was open to try anything. I have so many Vegan recipes I want to try and when I'm stable after following the low fodmap diet I will try more things.πππ
