Hi all
I've now made my nut roast which I've made suitable for a low fodmap diet (a diet for those with IBS). I've also made my favourite brownies and raw bars, again suitable for low fodmap. I honestly don't think you can beat the brownies.

I use:
252g mashed sweet potato, I sometimes put in more, it doesn't matter
160ml maple syrup - Aldi
129g peanut butter - I make my own
I don't use any oil
55g raw cacao powder - Grape Tree
68g oat flour - I grind the oats myself
61g pecans - Grape Tree or Lidl
48g dark chocolate chips - Aldi
90ml oat milk or more, you don't want the mixture too dry
Cacao powder is much better than cocoa and is a very good price in Grape Tree. Pecans are cheapest in Lidl or Grape Tree. The dark chocolate chips in Aldi don't have any milk added. I use Oatly oat milk.
I cook the sweet potatoes in the microwave in their skins, much quicker than the oven as the recipe suggests.
