I've now made my nut roast which I've made suitable for a low fodmap diet (a diet for those with IBS). I've also made my favourite brownies and raw bars, again suitable for low fodmap. I honestly don't think you can beat the brownies.
252g mashed sweet potato, I sometimes put in more, it doesn't matter
160ml maple syrup - Aldi
129g peanut butter - I make my own
I don't use any oil
55g raw cacao powder - Grape Tree
68g oat flour - I grind the oats myself
61g pecans - Grape Tree or Lidl
48g dark chocolate chips - Aldi
90ml oat milk or more, you don't want the mixture too dry
Cacao powder is much better than cocoa and is a very good price in Grape Tree. Pecans are cheapest in Lidl or Grape Tree. The dark chocolate chips in Aldi don't have any milk added. I use Oatly oat milk.
I cook the sweet potatoes in the microwave in their skins, much quicker than the oven as the recipe suggests.

It can be hard as there are some very good posts and we are all here for each other. I have been thinking of you. I'm glad you went out for a walk yesterday, even if it was in the rain, it's good to get out. Thank you and here's to you having your own kitchen again.

I've just seen your post and so glad you got out again today and bumped into your sister and her husband, what a lovely surprise.
I've had a very good day thank you, house all clean and a good workout at the gym.
Sounds very tasty. I have done a fruitcake, and we will probably have turkey again too. I plan on serving up a tea of scrumptious red and green cupcakes, and a fruit and cheese platter will also be prepared in advance. I may even do a nice plum pudding and hand out chocolates as we watch a Christmas movie. Other lovely festive suggestions include a tasty festive mince pie or two as well as aniseed balls, and yummy pencil like sweets as a prize. Depending on whether I find the stuff next week at the shops I may even have to make up a tray of Santa biscuits and serve stewed pears for Boxing Day dinner.
Sounds like you have Christmas well and truly planned, well done. The rest of the family will have turkey. I remember making my husband green coconut buns when the children were small and putting them in his lunch box, he'll never let me live that one down, he remembers it to this day LOL. You cannot beat a fruitcake prepared well in advance, so much nicer and very moist. Really does sound like you are going to have a lovely Christmas.
Out here in Northern California Whole Foods hires a chef to create a vegan meal for Thanks Giving and repeated for Christmas each year. Christmas is sold out this year so I think we will give the nut loaf a try.
Otherwise mashed potatoes, squash, and vegan dressing floating in vegan gravy usually does it with some kind of desert.

That sounds really good, I bet the vegan meal is delicious. I only make all my own because of following the low fodmap diet.
I do love the sound of mashed potatoes, squash and vegan dressing though, that does sound tasty. I made a Vegan Shepherd's pie the other day (I did post about it and here's the link), It's a low fodmap recipe and I've made it before and really do enjoy it.

Thank you Patsy. One of the reasons I love the brownies is because although they have maple syrup in them the rest of the ingredients are pretty good i.e. sweet potatoes, which have a lower GI than normal white potatoes, peanut butter, oats, vanilla essence and raw cacao powder. They are gorgeous.
I also watch my weight so ensure that most of what I eat is healthy and I'm also very fortunate is being able to exercise a lot which I know due to health conditions a lot of people can't exercise so I know how lucky I am to be able to do that.

Thank you Jerry, I've taste tested the nut loaf and it's really good and the brownies, well, need I say more π. I honestly couldn't say how many times I've made the brownies now.
