HAPPY THURSDAY! I hope the sun is shining for you like it is here in London. I've been feeling a little down the last couple of days, but the sun has cheered me right up today. This week I wanted to share with you another Jamie Oliver recipe that is a favourite one of ours. I have to warn you it is definitely not the healthiest, but it is sooo tasty. This is from his 30 minute meal cookbook, but the recipe can also be found here: jamieoliver.com/recipes/che... It is surprisingly easy to make and really cheesy! We paired it with some tomatoes, pesto and white wine vinegar, but any side of veg would do.
What have you guys been baking or cooking this week? I also made some easter chocolately brownies that I'll post another time and have been snacking on them all week! Hope you are all staying healthy and positive!

I can't believe you saw a baby boar on your way to the shops!! I don't think I have ever seen one before!! Hope you continue to have a really great day in the sun!
Hi SadieHU. We had a Spanish omelette (tortilla) a day or so ago. I sliced three large potatoes thinly and sautéed them in olive oil in a sauté pan with one large, finely chopped onion, with the lid on, so that steam helped to cook them. Then I added some chopped leftover ham, and four ounces of strong cheddar cheese. (Manchego would be more authentic, but I didn't have any). I then beat three large eggs and added a good sprinkling of hot red pepper flake and a heaped teaspoon of salt (though that could be omitted if salt restricted) and let that trickle through the mix. I compacted it down with the back of a spatula so that it formed a firm 'cake' and cooked it almost through, then flipped it and briefly cooked the other side. I left it to cool and then we had it sliced into wedges for our evening meal with a big mixed salad. It was pretty yum and I noticed that the leftovers mysteriously disappeared overnight! 😞
That sounds so delicious! Especially if there weren't any leftovers for the next day! Did you have any trouble with flipping it? I have had some disasters in the past trying to do that! Thanks for sharing your meal
I cannot believe how tasty that looks to eat. It had made me really hungry looking at it. When you are feeling a bit down, it is nice to eat some comfort food. I hope you will be feeling brighter very soon. We all have our off days. xx

I'm sorry you e been feeling a bit down, very strange times. I'm glad the sun has been shining for you and you've found some solace in cooking. That does look good.
These are very difficult times and I think most of us have had down days, I'm missing my daughters, son in law and grandchildren but I know they'll be there waiting for me when all of this is over.
