Hope you've had a good day.

I decided as the weather was so wet I'd do some cooking. I made a low fodmap vegetable curry and Vegan roasted chickpea and vegetable bowl with peanut cream. I ground down some oats to make oat flour, made peanut butter and vanilla ice cream for hubby.

I taste tested vegetable bowl with peanut cream, that one's in the freezer, and I had the vegetable curry tonight. Both are absolutely delicious and I'll definitely be making them again. Yesterday I made a veggie packed low fodmap soup and that was lovely as well (sorry I didn't take a photo of that one). I didn't use chickpeas in the curry as one cup is not a full tin and I didn't want to waste them, the curry is absolutely fine without them.

Many dishes later I'm now sat down ha ha.

Now that was a good day, beetroots I love and fortunately when I've finished the low fodmap diet I'll be able to eat them again as I didn't react to them and pesto, wonderful stuff - result.

You have been busy 😊 can I ask how you how I can post more than one photograph at a time please?

I certainly was. Yes of course you can, on my phone I go to the gallery where all my photos are, click on the 4 dots to the right of the screen, create collage and then select the photos I want, my phone will create a collage of up to 6 photos. Also, if you go on to the Google photos app you click on 'for you' icon at the bottom of the screen, then click on collage at the top of the screen and you can create a collage of up to 9 photos using that one.

Hi Callendersgal, it really was a very good day and made good use of what was such an awful day weather wise. I had the curry last night and it really was tasty.

Vegetable bowl and peanut cream wow sounds scrummy. What’s in the cream other than peanuts?

It really is Ali and the peanut cream has peanuts, soy sauce or tamari which is what I used, chilli, vinegar (I didn't have any white wine vinegar so I used ACV, sugar (I used coconut sugar) and ginger. Just a tip, when I make it again I'm going to cook the carrots almost completely in the oven before adding anything else as they take so much longer to cook.

Well done it's good to have a batch cooling day then when hot day just take something out. I've had a good result lately just before lockdown I'd started having a bit of red onion with my salad when out. So other day saw some red spring onions got some and I've had one nearly every day and no side effects YEAH. Didn't want to buy red onions as a whole one too much and just in case upset me would be wasted.

Thank you and it was good to get so much done, I'll be baking my bread tomorrow as the dough is rising nicely at the moment. That's fantastic news with the onion. I didn't know you could get red spring onions. I cannot eat raw onions and I knew that before the diet as I get tummy cramps with them. I have found though since following the diet I will be able to incorporate a small amount of cooked onion into my diet. When you think if you make a curry you'll probably only use one onion for around 4 to 6 servings. So pleased you are able to eat the onion, excellent news.

Cheers not seen them anywhere but Lidl only 3 in a bunch and more expensive but I don't care I can have them LOL

Years they're getting a lot of different things in now even do gluten free burgers, meatballs and sausages and last year had some lactose free ice cream hope they'll get it back this summer

Hi

My son can't eat garlic or onion. Someone suggested a herb on here, we got it,(can't remember name of it) but this didn't agree with him either. Any ideas of what we can put in curry instead of onion please? Love and hugs Lynne xxxx ❤️🤗🌈💜

I feel for your son, it's not nice when you cannot eat what I call common foods. It might have been Hing you saw on here as that is what I use but you use a tiny amount, about an 1/8th of a teaspoon. Other than that, I add in garlic infused olive oil, I open the top of the oil and sniff it, it smells divine, I can't resist smelling it before I use it.
