Hope you are having a great Thursday so far! This week was Bread Week on the Great British bake off, so I tried my best with a red pepper and olive focaccia recipe. Bread is definitely not my strong suit when it comes to baking, but it was fun to get out of my comfort zone and I think it turned out ok! I used a recipe I found on a cooking website mylittleitaliankitchen.com/... that was very basic and easy to follow. I love red peppers and olives so this was a great bake for me and my husband. I made 2 sets of dough, one mixed for 5 minutes in a mixer and one mixed for 7 minutes. It's amazing the different it made in just tweaking it by that small of a time. I think both taste pretty good though! We definitely won't go hungry this week!

Tuesday night we had jacket potato with tuna and tonight it's jacket potato along with leftover haggis.
Wow SadieHU - your Focaccia bread looks amazing. I am going to have a look at the recipe. I bet it is delicious!
I baked some Banana & Blueberry Muffins yesterday - they were a Vegan recipe and turned out to be tasty. They are quite small though, and I've had a couple each day!

This recipe looks fantastic. Will definitely try it as I love baking. I made a sundried, olive and tomato loaf. Also very tasty.
Well that looks delicious to me SadieHU! Some very professional looking bread! Oddly enough I chose to do some focaccia too this past week. I studded mine with little cubes of gruyere cheese, dots of tomato puree (as I'd run out of the sun dried tomatoes, which I usually use, and topped it off with some air fried onion. Almost anything goes with focaccia! 😊
