Hello everyone, happy Thursday! I hope this week has been treating you well. My mood is definitely correlating with the weather and have felt myself become a bit sluggish as the sun as gone away, but hopefully that is just a blip.
The picture I posted today is from one of the last times my husband and I were able to go out to a local spot for brunch before lockdown began. I was refuelling after a long training run for the (now cancelled) London marathon and rewarded myself with a breakfast quesadilla/pizza that was out of this world.
This weekend we are going to attempt to recreate this at home using delish.com/cooking/recipe-i... as a guide and seeing what we come up with.

What lovely meals you have made this week, Jerry! And I have no doubt whatever you make with the Bramley apples will be delicious as well! I love the idea of using ground quinoa, what a great alternative. Did you buy it pre-ground or have to ground it yourself? I'd definitely like to give that a try sometime. I hope you have a wonderful rest of your week and a very relaxing weekend
Hi SadieHU , funny now the sun is gone I feel a bit like that as well but once the wind has calmed down I'll be out on my bike, I don't feel safe in strong winds.
Now that breakfast pizza looks awesome, I could easily have some of that. I had a cooking day yesterday where I made a Peanut Stew, Cream of Parsnip and Carrot Soup, Sweet Potato Brownies and biscuits, these were for my hubby and they were chocolate chip and shortbread.
Oh the brownies are awesome, believe you me. I put a post up yesterday with the recipes for the soup and stew and the brownies.π
Hubby was more than happy with the biscuits.π

Hi SadieHU, now that's what you call a breakfast. Oh happy day when you can go and enjoy that again, some time in the future.
I've been revisiting, (and sadly eating far too much of) a recipe I have for shortcut Indian Burfi, made with milk powder, condensed milk, and a little butter, all stirred and heated together until it thickens and then ground cardamom and rosewater is added. It's customary to add something fruity or nutty too, and as I had macadamia nuts, I topped mine with those. Then its left for a while to set, after which it's open season, and I find myself sneaking back to the fridge for yet another bit....... π
Looks delicious....except for the eggs! π I will have to try making it. What a great idea, salsa and guacamole on a pizza! Kudos to you for being a marathon runner. Takes alot of stamina to do that. Enjoy the day, sunny or otherwise! πβ π¦
