I hope you have had a good week so far and feel ok today
I must admit I haven't been cooking and baking as much this week. I have felt a bit under the weather, not sure if it's the colder weather, or a bit of a mood slump after the guidelines update on Sunday. Whatever the case is though, I feel like I'm coming out on the other side of it and hope to have a more productive weekend!
I can't take credit for the meal this week, my lovely husband has made it for Wednesday night's dinner and today's leftover lunch. It is Turkish Flats by Jamie Oliver in his 15 minute meal book. It's one of our family favourites and tastes incredibly fresh with the salad mixture that goes on top. I found the same recipe on a cooking blog here cookinwithchris.wordpress.c... if you'd like to try. I would highly recommend.

I think a lot of people were upset over Sundays announcement by the English government!
Here in wales not much has changed apart from that you can do outdoor exercise twice a day if you want to!
Tonight its baked beans and sausages for dinner as yesterday we had pease pudding and spam for lunch which I enjoyed.
Sadie, that meal looks delicious, even though I don't eat meat!
I'm with you on feeling a bit low this week - I think the recent Government announcements took the wind out of my sails. As you say, hopefully the weekend will bring more sunshine and optimism.
I find that the creativity in cooking does lift me. I plan to use up some of my old herbs this weekend to make some herb oil relish which you can keep in a jar in the fridge for a week or two - makes sure that you don't let any herbs go off which gives a certain satisfaction!

That looks like the sort of meal that might help. It does look fresh and bursting with goodness. I could definitely be tempted to give this a try!
I haven't cooked very creatively this week, but I have been perfecting making my own pitta breads, and now I've mastered the art of the 'big puff' as the steam builds and causes the inner to separate, I don't think I'll ever go back to buying those dreadful bits of dried cardboard, unworthy of the name, that are sold in supermarkets as pittas.
