Happy Thursday everyone! I hope you have had a great week so far and are looking forward to the weekend. I'm very much enjoying the cooler weather, though not days where it's pouring rain. Yesterday I made this super summer salad from Jamie Oliver to brighten my day. I couldn't find the recipe, but I've listed the ingredients in case you want to try it! Apologies for the picture, it's in my Tupperware for leftovers instead of nicely put together on a plate.
Ingredients:
4 spring onions
120g roasted red peppers
1 slice of wholemeal bread
80g feta cheese
2 limes
mint
1 red onion
1 orange
400g watermelon chunks
250g quinoa
100g radishes
1 chicory
1 red chilli
1 tbsp chipotle Tabasco
40g blanched hazelnuts
Instructions: Cook 250g quinoa and blend together the spring onions, roasted red peppers, slice of bread, tabasco, juice from an orange and a tablespoon of olive oil. Mix this dressing with the quinoa. Finely slice the radishes, chilli, and red onion then add to the quinoa mixture. Toast the hazelnuts for a couple min and crush them up using a pestle and mortar if you have one, then add these to the quinoa. Finally, slice the chicory and mint, add these and squeeze the juice of 2 limes over everything. Give it a good mix, crumble over the feta and add the watermelon.
I really enjoyed this meal! I was skeptical the flavours of all the ingredients wouldn't work well together, but I was glad I was proved wrong! It was very refreshing and delicious for lunch again this afternoon.
