Hi all, hope you are having a great Thursday and the weather isn't as dreary as it is for me. I am not too dispirited though because I have had a major morale boost from the football coming back last night! It's definitely not the same, but it is a huge joy to watch live sport again!
This week I wanted to share a major rainy day comfort food my husband and I love to make: Jamie Oliver's thai chicken laksa jamieoliver.com/recipes/chi...
It's full of flavour and, although it has a lot of ingredients, pretty easy to make. I just had leftovers for lunch and it was perfect to eat on the couch and watch the rain. My picture doesn't do it justice, have a look at the recipe instead for more inspiration!
What are you all cooking and baking this week?
Have a great rest of your week!

Love a laksa! Tonight I will be having a baked potato filled with cottage cheese, beetroot and spring onion, with a green salad dressed in lemon, oil and herbs. Tomorrow I will be baking my pa a pear and chocolate frangipane tart! Very naughty but it is Father's day! xx
Wow Jerry! They both are so impressive! I love that you're always baking meals and treats every week! Very inspiring. I think we're looking at a better week weather wise next week so maybe we'll be able to make some more summer type recipes! Have a lovely weekend
It is a laksa, spices similar to a curry but more soupy. Check out the recipe in the post!
Hi SadieHU, that looks good! You always seem to have a successful end result with your recipes which I didn't have this week. I found a recipe for pasta which contained bacon, cream, onion and cheese, all the things I absolutely love, but then said that the final ingredient was a quarter cup of sweet chilli sauce. It even said 'this may sound very unusual but have faith. It adds a delicious flavour.' So I had faith and added it, though it really went against every cooking instinct I ever had.
oh no!! i'm so sorry to hear that!! i have definitely had that happen to me before, it's just the worst feeling spoiling a meal you were looking forward to. i hope this week's meals are much better
I had winter veg soup for lunch today along with rice pudding which I enjoyed and for dinner had noodles and tuna and a banana.
