Try new food Thursday - Curried fish stew

Happy Thursday everyone! What have you been cooking or baking this week?

It's week 3 of social distancing for my husband and I and I feel this week has definitely taken a hit on my mental health. I'm starting to get anxious over not knowing when this will end and finding it more difficult to focus on my work sometimes.

As an outlet though, I have been baking and cooking every day. This week I will share with you Jamie Oliver's curried fish and prawn stew. I always crave comfort food when I'm feeling down and having this stew for dinner and lunch the next day was exactly what I needed. Here is the link to the recipe if you'd like to try it.

As always, this community has been a great support when I need it and I thank everyone of you for contributing and being a part of it!

Sadie, this dish looks amazing. I have that Jamie Oliver book so I'm definitely going to give it a go. Last night I cobbled together a very simple veg curry as I'm low on ingredients at the moment, but I'm finding inspiration from Atul Kochhar's very simple curries. This is the one I plan to do next as it's so simple - potato and egg curry:

ooh Adeela, that looks wonderful! I love potatoes and eggs so will definitely give this a try. Thank you for sharing, hope you are doing alright this week :)

Just set banana drop cookies to bake. It’s a recipe I found online. I’ll let you know if it’s any good!

I just ate a couple out of the first batch. They are really good! If anyone wants the recipe I’ll be glad to copy it here.

Here you go. You may have to convert to metric but it’s a fairly simple recipe. I would add just a little more flour if you sift it first.

Banana Drop Cookies

1 1/2 cups white sugar

2/3 cup shortening can be all butter

1 teaspoon vanilla extract

1 cup mashed bananas

2 eggs beaten well

2 1/4 cups all purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

Combine flour,baking powder,baking soda,salt and cinnamon

Cream shortening,sugar and vanilla. Add eggs and stir in bananas

Mix dry ingredients into wet

Drop by teaspoons on greased sheet. Bake at 400f for 8 to 10 minutes till golden brown.

I left a plate out to munch and froze the rest.

Your food looks fantastic, obviously I would not eat it because of the fish and prawns but it still looks fantastic, tasty and colorful. It must be terribly hard social distancing from your husband but have every confidence that at some point it will end. xxx
