Hello everyone, I hope this Thursday (and this week) has been treating you well. I thought I'd share with you the lunch that I just finished eating. This is Jamie Oliver's lamb kofta with pitta, couscous and greek salad. It's got a lot of ingredients, but it is delicious and refreshing and still is light despite the lamb and pitta. Those fritters look great, Jerry! And the salad looks so refreshing and tasty. I never thought to make fritters with mushrooms and potatoes, I'd like to give that a try.

I made another favourite of mine the other day to have with some teriyaki salmon. It's a middle eastern dish called Mujaddara. It's really just a mixture of cooked rice mixed with lots of (usually) green lentils and friend onions, heavily seasoned with cumin. I always spice mine up with the addition of some red pepper flake too and have double the amount of onion given in the recipe! This week I had to use brown lentils instead of green and that changed the texture a bit, they being slightly chewier than the green, but it was still really tasty.
Your meal looks super and fresh and really well balanced. I bet it was delicious! 🙏
