Buckwheat bread

I was able to buy the above flour today after Holland and Barrett kindly put some back for me.

I can't eat wheat or even my homemade GF bread as I reacted to the almonds in it.

I've now made my bread - yay😊

Your bread looks wonderful . My Father used to make Buckwheat Pancakes when I was little. I love that flavor . Enjoy your bread.

For a different reason, (wheat flour not available) I tried substituting it with ground up porridge oats in my bread, with delicious results, though slightly denser loaf. Will probably make a habit of it!

Well done and oats are lovely in bread, I made GF bread but unfortunately had a reaction to it because of the ground almonds. I have IBS and have a very sensitive stomach that's why I normally make spelt sourdough. Am I right in saying your oat bread had yeast? Reason for asking is that I'm also sensitive to yeast.

I've got the Buckwheat Soda bread in the oven today. The first loaf was okay but it wasn't my favourite for flavour but the one in the oven now has added natural yogurt and a small amount of sugar. I do find Buckwheat needs something added to it for flavour.

I agree. It is a bit of an acquired taste. I made a white rye loaf with caraway seeds yesterday. Reasonably pleased with it.

It really is an acquired taste. I will just keep adding other ingredients i.e. maybe some herbs and spices. Well done on your loaf, it sounds good.

Thank you Lily77 . Yes cooking the GF way can be tricky as I find things can fall apart more easily. :)

The secret to the crumbliness is 1 and a half teaspoons of glycerin for cakes and 1 and a half teaspoons of xanthan gum plus wrapped overnight in the fridge before rolling out for pastry, I have found. My best Lily

Looks good but I have better use for buckwheat. I bought a buckwheat pillow when I was having drenching night sweats. I like my buckwheat pillow so much that I still use it to day after having treatment and not having night sweats. I would say that it even beats a "MyPillow" :)

Well that's a different use for Buckwheat and what a good one. When I was getting night sweats I started sleeping on a towel and that worked quite well, in fact, I still sleep on a towel now. Your use is certainly very creative. :)

Yes, the buckwheat absorbs the moisture and is also cooler. I used a 3' x 4' quilted underlined bed pad like used in hospitals below pillow.

Thank you Hidden . My regular bread is homemade spelt sourdough but I've not been able to get spelt flour for about 4 weeks now so had to improvise. I'm going to try another recipe using the buckwheat and that one has natural yogurt in it so I've bought some natural coconut yogurt today. There certainly seems to be a lot of people baking during this lockdown.
