Vegan GF Irish Soda Bread

Since the lockdown and the panic buying I'm finding it harder and harder to make a loaf of bread that I can actually eat. I made a GF one about a week ago and it didn't like my tummy, I found out it was the ground almonds. I've also made Buckwheat bread which I don't really like but cannot eat that either so today I've made the above and swapped out the Aquafaba as I cannot have that either for Vegan egg. Here's the recipe:

You will see the comments below the recipe and one person used the egg replacer, added extra flour and also used sunflower oil.

It is hard to make bread without gluten. It will not be good. Like corn bread. Usually our grandmothers mix it with other gluten flour. If you eat eggs, you can make cookies. With soda bicarbona. Eggs will stick all together. Can be without yolk. Don't make it too salty. Taste before backing. You can add ... And unsalted is not tasty.

Thank you for your reply. I'm a Vegan hence not using eggs. I buy spelt flour and make my own sourdough bread but sadly cannot get the flour.

I try to cook gluten free, there is a really good Lorrainr Pascal bread, that I love making, thevegetarianexperience.co....

It's really quick and easy to make and is delicious. It is heavier than normal bread, but I don't mind. Enjoy your bread.

Thank you. I've just looked at the link and see it uses normal flour, do you make it using GF flour?

I make spelt sourdough and it's lovely, the only reason I'm not making it at the moment is because I can't get the flour. The recipe I use is on the Dove's farm website.

Yes .... sorry late in reply. Ran into a (symptomatic mole hill this morning, ) leaving me feeling unwell.

Spoken with Doctor on phone, told me to stay in bed 🛌 get as much rest as possible, drink plenty of water, no food. Ringing me again tomorrow.

Generally feeling very lethargic and nauseous, so quite happy to follow instructions at this point.

Oh no, so sorry you're unwell, I have every sympathy for you as I've been suffering with nausea today, I have IBS. It's horrible isn't it.

That looks really good Alicia. Well done. It must be really trying at the moment having to adapt to shortages to produce your daily bread.

Thank you Zoonie and I have seen that one as I get their emails as it's Dove's Farm Spelt Flour that I buy regularly when they have it of course. I eat very little pasta so I feel it may be a waste for me but thank you very much for replying and adding the web address.
