For the low acid many people find an acidic drink with large meals helps. I take about 30 mL of lime juice, diluted with water/tonic or orange, with lunch and dinner. Others swear by apple cider vinegar.
I got my Type 2 under control by consuming fewer calories.
you may find that you benefit from taking levo with some fruit juice rather than water (that's what I do).
I think that the ideal is a stomach acidity of pH4 for absorption, which is why the recommendation is to take it on an empty stomach (when acidity should be lower) but that may not work for someone with PA because they are likely to have lower stomach acidity than normal.
Not sure who told you to avoid all of those foods - better to find out precisely which nuts and vegetables they are talking about - its about chemicals in the particular food that can affect the way levothyroxine functions. You need to have a good range of micronutrients from your food so in general it isn't a case of trying to cut out particular foods completely but using them in moderation. Brassica's (broccolli etc) are another example of a food group that contains a substance that can interact badly with levo but they are also good sources of folic acid - B9 - so you need to take a balanced view of your diet - particularly as PA patients often have problems with absorbing other micronutrients - commonly iron and folic acid.
