as Hidden says first thing would be to ensure you are getting the right treatment.
This assumes that you are based in the UK
would be good to evaluate your symptoms to check for neurological symptoms as the treatment for that is more aggressive

even if you have another condition that has overlapping symptoms use the checklist as if you didn't to be on the safe side. Also, B12 deficiency comes on very slowly so some of the symptoms may have been around for years or even decades.
Ask about investigating what the absorption problem might be - as different causes have different consequences. Possibilities include PA, coeliacs, crohn's, h pylori infection. Blood for a PA test should be drawn before your first loading test to avoid false positives. Unfortunately a negative on PA would be a long way from ruling it out as a cause as it produces false negatives 40-60% of the time depending on the assay method.
If the tests were private then its possible that the GP may want to repeat them but hopefully that won't be the case.
GP can access BCSH guidelines on diagnosis of cobalamin and folate deficiencies through the BNF - they need to read a little beyond opening paragraphs to get details of different treatment regimes.

Please get checked for h pylori!!!
Need b12 injections, oral folate, oral iron.
Iron needs vitamin c for better absorbtion.
Vitamin d level low, per your thyroid post. D needs/ cofactors are vitanins A and K AND MAGNESIUM. Lots of magnesium. Magnesium alone will help anxiety.
If you are craving salt, salt and more salt that could be due to thyroid not functioning properly so adrenal glands have to compensate and they like salt.
If that is the case make sure you get plenty of zinc and selenium, as if you dont get enough of these 2 nutrients your t4 can convert to reverse t3 and you can feel bad even with an opitmal t3 range.

Please consider adjusting nutritional issues before adjusting thyroid meds as once your body has the correct nutrients, your body may not need thyroid medications.
