Once you are being treated for B12 absorption problems the blood test results don't really mean much unless they come back low - showing that your kidneys are efficient at removing B12 from your system.
It is quite possible to feel dreadful with levels at 2000 after loading shots as having high B12 levels in your blood can kick off a totally different auto-immune response that tries to shut down the transport of B12 to the cell level where it is needed. Once this has happened its like having a dam between your blood and cells and the only way of making sure that enough B12 trickles over the top is to keep levels really high. However, most GPs unaware of this and the existence of functional B12 deficiency.
However, given that you mention thyroid and there is a huge overlap in symptoms it may be worth double checking that thyroid isn't the problem - or even something else.
