Not doing 5.2 but I am doing soup - easy do do, easy to fit your 500 cals, easy to microwave! Endless flavours, filling and nutritious! x
Agree with Judywood, soup is your friend on fast days. Even if you are not a cook, making soup is easy or, there are many healthy, low-cal soups on the market. I try to keep things simple on fast days so I can occupy myself with other interests and keep away from the kitchen. Try to aim also for a little protein - eggs are ideal and only 90c for a large one.
For my fast day today (breakfast and supper, tried only having one meal in the evening but found it wasn't for me) I am having 30g porridge made with water, with a tablespoon of fat free nat. yog and then home-made soup and a boiled egg. This together with milk in my coffees during the day brings me in at just under 500
I find this perfectly doable knowing that it is only for one day.

Yes, I find ready meals are my friends on fasting days. When I started 5:2 I had the Glorious Skinny soups, half a tub for lunch. My evening meals are always low-calorie ready meals with a steam pack of frozen vegetables (cooked!) on the side. I've been doing this since 2012 so I now just have an M&S Count on Us meal in the evenings. I'll sum up 5:2 below for you.
I lost the three stone I needed to on the 5:2 Diet after watching Michael Mosley's excellent Horizon programme in 2012, "Eat, Fast and Live Longer" tinyurl.com/qzgo7tq or tinyurl.com/a8ppjl7 and went from a size 16 to a size 10 by eating 500 calories two non-consecutive days a week. I've been maintaining my weight loss since April 2013 by just fasting one day a week - in the past I piled the weight back on as soon as I finished 'dieting'. I'd very much recommend you read Kate Harrison's book, "The 5:2 Diet" (tinyurl.com/qe6mz4u) - it really does work and it will save you a fortune (towards your smaller clothes!).
I'd also very much recommend a free app for your phone called MyFitnessPal. Counting calories is very important so you can see how much you're eating and therefore eat mindfully rather than mindlessly. There are excellent videos in the Help section on the app that show you how it works - there's even a barcode reader to scan in branded foods.
It's important you don't eat more than your TDEE (Total Daily Energy Expenditure) on non-fasting days. You can work that out here thefastdiet.co.uk/how-many-.... If yours works out at more than 2000 then aim at 2000 on non-fasting days.

I eat egg in the morning & then soup or salad through the day, go for veg based or broth soups as fewer cals! I snack on celery through-out the day! Good luck x
