Easy Meals

We figured out that posting recipes here doesn't really work, but I'm always hunting for fast and easy recipes, especially those that freeze well. With summer coming, slow cooker, no cook, easy prep, but healthy meals are the type I appreciate most. I have a "once a month" cookbook, but there is no way I can do that much food prep all in one day. I do find that on good days, I can usually prep 2-3 meals to stash in the freezer for those days when I'm just not up to cooking.

If you know of links to great sites with easy meals, I'd love for you to share them with the group.

Now that I'm "retired", sorry I don't like saying the other word,... I have become addicted to cooking. I spend too much time going through the 100 ways to make green beans, or 50 cool summer desert ideas using watermelon, then search for more when I pick one. You have to also look at all the comments if you're going to come up with the best for my next "green bean recipie". But wait, we need to tweak it by.....

Too much time on my hands? Yes and no.

I learned the real trick is to plan way in advance, so when it's time to do it, you can start prepping early. Sometimes before the sun rises, for dinner. That way you can pace yourself to the finish line. Dinner. By the time dinner is ready, sometimes I can be too tired to eat it? Nah, but I have skipped the xxx and the yyy I prepared,... will have it tomorrow? Wait, now I have to refigure the menu for tomorrow??? Too much time! Don't EVER say that! After forever of never ever having enough time to even do the simplest of things,.. too busy working every waking moment for years. It sure felt that way.

Sorry, too many sites with recipies. Hard is only if you're never going to find that ingredient needed this time of year. Remember. You can't rush cooking. If you can't do that, hire a chef. Or hook up with one?

If I make something like soupS, stews or chili in the crockpot, I can freeze a good amount of separate dinners. Sometimes I have 2-3 crockpots going at once (marathon cooking days). I freeze, label and defrost the night before so that I don’t have to think about cooking most nights. Or a quick veggie omelet or salad. Albeit, I’m no gourmet and my hubby isn’t picky 😁

I wish that the pictures in cookbooks could materialize into a dinnertime meal, greaterexp ! *Sigh* In my prior life, I used to collect cookbooks and actually use them. Most of them have very pretty photos. Some of them even have no teeth marks on them... I get a free daily recipe from Martha Stewart ~ lots of inspiration here! I signed up on her website. Keep Smiling :-D

I still have about a million cookbooks, even after getting rid of tons. I started putting together a cookbook of sorts for my kids and grandchildren after my daughter would call and ask how I had made something she liked while growing up, usually with no recipe. We were both sad that many of my grandmother's recipes were lost forever, especially as I remember savoring her cooking when I was little. Unfortunately, much of the cooking I grew up with and cooked for years were hearty, Amish-style meals. Now I want healthier, easy, and quick recipes.

I do have a slow cooker, air fryer, Instant Pot, rice cooker, and a well-stocked kitchen and pantry. I don't understand why meals don't magically appear each night!

My daughter moved here from Elgin a few months back and has been cooking. Don't know how we raised kids as neither of us cooks! Next week Monday she is returning to work there for another month. Back to starving again!

Fork to spoon is a good one. Our daughter gave use a dual pressure cooker/air fryer pot for Christmas and now I follow on FB Air Fryer tips and Recipes timeline and get all kinds of advice for quick meals. I cook 6 lbs of organic carrots (hubby cleans and slices) in about 12 minutes and put in 1qt size bags for meals. I do this for different kinds of fresh veggies. Freeze well. Soups and casseroles cook wonderful. Brown rice (entire bag) cooks in 8 min with plenty to freeze for future meals or make into casseroles. Yesterday I made chicken stroganoff (rather than beef stroganoff), enough for about 6 meals, froze for 4 meals, kept fir 2 meals. Also been sautéing a lot of spinach, kale mix with onions and garlic when I have energy and freezing it in bags then mixing it in casseroles or soups. Hubby loves it better than fresh salad. Read body gets more iron out of it this way. Mine pot is an Enerill Lagrasse brand but I read Ninja is easier bro understand. Took me about 5 months but I’m finally comfortable with mine. Just a suggestion for cooking a several meals at one setting.
