Sausages? Personally I think sausages are actually better when they're cold.
If you wrap hot sausages up in foil, they stay warm for ages
Don't get stuck with the idea that breakfast has to comprise of 'breakfast' food. Anything can be eaten, at any time of the day.
Roasted veg
Cold meats and cheeses, olives, tomatoes
Dips and crudites
Salad
Soup
Stews and curries in a wide-necked flask
Yoghurt
Berries and cream
Leftovers
I make a loaf of bread every week using flax seed ( I have attached the receipe link below). Personally I find flax seed a bit pongy ๐ so I add grated pecorino cheese ( I canโt eat cows milk so use this sheep alternative to Parmesan) and add random herbs and smoked hot paprika into the mix to slightly suppress the flaxseed, which I donโt notice now. I wrap it in tinfoil and leave it in the fridge and it lasts all week. I prefer it toasted with butter and marmite but it is sooo useful to have as a boost in the week. Hope you enjoy!

I have full fat greek yoghurt with brazil nuts and hazelnuts, and cream on top. Kind of porridge replacement! I've taken it out with me in a pot when I've not had time for breakfast in the morning.
Its not keto but low carb...I sometimes make full fat Greek yoghurt, double cream, chia seeds and frozen mixed berries which I leave to soak overnight. Quick and easy!

There are some ideas here dietdoctor.com/low-carb/rec... I take your point about not having a lot of time in the morning so it may come down to planning and prep the night before. Are you off eggs entirely or just fed up with having them every day?
You can google carbs in yoghurt and comparisons between different types. Full fat Greek comes out best
