Do you like salad? You can try to cut up the goat cheese and add it to the homemade salad either as a side salad or big salad.😀👍
I’m a big fan of goats cheese and I also drink goat milk and eat goat yogurt. There are a lot of advantages to goat dairy as opposed to cow dairy.
I love a salmon fillet, place skin side down on a tray or on foil and on the top put a spoonful of pesto and spread it over the top, then top with sliced goats cheese and bake. This pesto and goats cheese topping works well with any meat to be honest.
Chicken breast stuffed with goats cheese is amazing.
If you google Ottolengi (he’s a chef) and goats cheese salads, he has some really lovely ideas.
Goats cheese pairs very well with fig too - I avoid this except for special occasions as it has too many carbs.
My flavour thesaurus also says goats cheese pairs well with; basil, cherry, butternut squash (I imagine it would be lovely crumbled on soup), chilli, chocolate (i can vouch for this one), coriander leaf, cucumber (in fact it’s great in any Greek style salad), garlic, fig, lamb (YES! This is an amazing combo), lemon, mint, mushroom, olive, pear, raspberries, rosemary (if you are able to eat carbs it’s amazing with a drizzle of honey and some fresh thyme and rosemary chopped and sprinkled over), walnut, watercress.

Oh sorry, I just noticed you already said you can’t have carbs. Well depending on how you feel about fruit - which is very carby - so of this may not be relevant. I mostly Don’t eat anything above 5g per 100g carbs but still manage to make very good use of goat dairy.
I eat it alongside grilled Mediterranean vegetables or grated onto it.
crumbled in salads, crumbled over roasted beets, great with eggs (though eggs too often, not good for prostate).
