The evidence associating even whole soya with reduced cancer risk is mixed, and some say there is increased risk. Differing cancer rates in different countries can be for a whole host of different reasons, ranging from lifestyle, specific ingredients included or excluded, and diet diversity. Other reasons attributed to the lower cancer risk in Asia include greater consumption of fresh fish and varied vegetables. And of you over-focus on one risk by excluding foods or eating a lot of another, you may introduce other health risks.
So the main thing in all this is to have a varied diet with not too much of any one thing.
I make my tofu with teriyaki sauce. Simple and easy. You can bake or fry it. I'll slice mine, fry it, then add teriyaki sauce. Sometimes, I'll saute some veggies and toss it into the mix. Then you serve it over rice.
I recently experimented by making a burrito with dumpling filling. I browned ground beef, then mashed up tofu in the mix, and added teriyaki sauce. I wrapped it in a low-carb tortilla and non-dairy cheese. It was a decent variation of the traditional dumpling, a lot quicker to make, and less greasy.
Also, you can cube tofu and throw into chicken soup.
