Good morning! I just wanted to say 'hi' as a newcomer to your Admin team. Some of you will have seen me around on HU forums already and I've been a guest member of Healthy Eating for a little while now, more as an observer than a contributor.
I have to start with a confession! I'm not the healthiest of eaters, and my standpoint is more about eating for my mental health than the physical. But that said I do strongly believe in good ingredients, experimenting with those and enjoying cooking, whilst hopefully not being too wayward with the healthier aspect of eating well either.
In any event I shall, I'm sure, continue to learn a lot from you all.
Happy cooking and happy eating!

Healthy eating is quite difficult. One week something is ok and the next there has been a new study saying that you must steer clear of it. I used to really enjoy my food but not any more. I don't have much enjoyment in much at all anymore.

Yes it can be a minefield can't it Bifield34 and I suppose in a way that's partly because 'healthy' is only a concept. But it's a huge pity if food loses its interest for you, and I hope you'll be able to revive that, as eating is quite a big part of our lives. I must say that as I've aged I've become less interested in food than I was and I'm a bit less adventurous than I used to be. Is there maybe some underlying health issue that's caused your disinterest? Do take care, and if you begin to lose weight, then please check things out with your doctor.
Hi and congratulations on becoming our newest Admin. for HE! As Cooper27 had said, we're happy that you've joined and are on board with us and the members. 🙂👍
My pleasure. You were among one of the first to welcome me on my first post when I joined HU and hold you in high regards for being friendly and welcoming You're a fantastic addition to healthy eating.
Welcome, we generally try to follow a basic Mediterranean diet with lots of fresh fruits and vegetables. We are members of Slimming World, not so much now to lose weight but more to maintain a healthy balance. We aim for colourful plates, nothing worse than white fish, white potatoes and cauliflower and yet the same meal can look lovely with the addition of carrot and broccoli for instance. I usually have a mixture of fresh fruit and Quark soft cheese for breakfast, sometimes with porridge. Lunch is often homemade vegetable soup, often with leftover chicken added. Dinner is meat or fish with a mix of vegetables. Happy to share recipes.
Thanks for your welcome kitchengardener2. I don't think there can be any argument that Slimming World or any diet club is a really good idea and a Mediterranean diet has shown over time to be a really good way to eat. Looking forward to your recipes in days to come!
Lol, Hi kitchengardener2, no they aren't. I'm so sorry, I mixed up two welcome messages and was just in the process of doing an edit. Please look again in a minute or two and I'll hopefully get it right this time! 👍😊
Hi Fran182716, Oh I'm glad you got in touch as you were the 2nd party involved in my total catastrophe that is this morning! (I can only plead insanity, or that I got up with a bit of a headache today) but I'd started responding to your message, mixed it with kitchengardener2's post, tried to sort it all out and in the process deleted your message. And as a final insult to you, couldn't remember who it was. So humble apologies and I hope you don't get the impression that I'm usually this scatty! What I wanted to say to you was firstly, thank you for your welcome and a 'well done' for having lost those two stones and pushed back your blood sugars. I'm sure you can lose the weight again. It's something many of us are struggling with because of the pandemic but now that you have someone else (your son) on your weight loss journey, I'm sure it will be a little easier. Best of luck and please let us know how you are getting on from time to time! Sorry once again!
